Busy Mixing Tips


Step 1

•  1 tbl oil

•  4 boneless chicken thighs diced

•  6 tsp garlic minced

•  1 onion diced

•  1 tbs minced ginger



Step 2

•  2 carrots diced small

•  1 cup snow peas sliced

•  1 cup chicken stock

•  1 can diced tomatoes with juice

•  1 270 ml can coconut cream

•  1 tbs fish sauce

•  1 tbs indian curry powder

•  Salt and Pepper to taste


•  Rice to serve or quinoa



5 minutes prep

25 minutes ready to eat

Frypan

•  Heat a fry pan on medium and cook step 1

   ingredients for 5 minutes or until cooked through

•  Add step 2 ingredients and cook for a further 15

   minutes

•  Serve on rice or quinoa
