•  3 bacon rashers diced

•  360g (13 oz) pumpkin

•  2 cups self raising flour

•  1 cup spinach

•  100g (3.5oz) fetta

•  2 eggs

•  3/4 cup buttermilk

•  2 tbs pumpkin seeds








•  Preheat oven 180 and grease muffin tin

•  Fry bacon in pan until crispy then drain on paper  

   towel

•  While the bacon is frying peel, dice and then blitz

   the pumpkin for 10 seconds in the food processor

•  Add all remaining ingredients including bacon into

   food processor and pulse/turbo for 10 seconds or

   until combined.

•  Place mixture into muffin tin

•  Cook for 25-30 minutes

•  Serve hot with some butter...yummo
