Sugar Free Peanut Butter Cheese Cake

15 minutes prep

4.5 hours ready to eat


Food Processor or Thermo Machine and Oven

Step 1 - topping

•  Handful of peanuts

•  1 row of no sugar chocolate

Step 2 - base

•  1 cup almond meal

•  14 pitted dates

•  1/2 cup dried coconut

Step 3 - filling

•  250g (9oz) cream cheese

•  2 tbs sugar free peanut butter

•  ¼ cup rice malt syrup

•  1 tsp vanilla

•  1 egg

•  Preheat oven 180C (360F) Degree

•  Blend topping ingredients in thermo or processor for

  10 seconds.  Then set aside (don't clean bowl)

•  Blend base ingredients for 20 seconds. Remove base

   mixture from processor and roughly wipe the bowl

   clean with a paper towl (no need to wash it).  Place

   base mix into slice tray lined with baking paper.  

   Press down with the back of a spoon so its packed


•  Blend filling ingredients in the processor for 15

   seconds.  Once combined spread over the base and

   sprinkle topping mixture over the top

•  Bake for 25 minutes

•  Allow to cool then chill in fridge for 4 hours

•  Remove from slice tray and cut into slices

These are gluten and refined sugar free and totally delicious

Rice malt syrup is fructose free and better for you than sugar or honey (you can buy it at Coles or Woolworths in the health food section).  If you don't have rice malt syrup you can substitute with honey

I used a 20cm x 20cm slice tin.  If you have a larger one you may want to double the mixture
