Busy Mixing Tips

Oven and frypan

10 minutes prep

20 minutes ready to eat

Step 1

•  1 tbs oil

•  1 red onion chopped finely

•  1 tbs ground cumin

•   2 tsp ground paprika

•   500g (18oz) lamb mince

•   salt to taste

Step 2

•  4 small pita pocket bread

•  1/3 cup tomato paste

Step 3

•  handful parsley chopped

•  handful mint leaves chopped

•  200g (7oz) cherry tomatoes chopped

•  handful of kalamata olives sliced

•  1/2 cucumber diced

•  1 tsp lemon juice

•  1 tsp lemon zest

•  50g (2oz) feta crumbled

Step 4

•  1 cup grated mozzarella cheese

•  Preheat oven 220C (428F) degrees

•  Fry onion and oil until unions are soft, then add

   cumin and paprika fry for 1 minute, then add lamb

   and fry until brown.

•  While lamb is frying spread tomato paste on bread

   and combine step 3 ingredients in a separate bowl.

•  Once lamb cooked spread mix over 4 pita breads &

   sprinkle with cheese.  Cook in the oven for 10


•  Remove from oven and sprinkle combined step 3

   ingredients evenly over the 4 breads

•  Cut each bread into two or four slices and serve
