Busy Mixing Tips


•  1kg (2lb) beef or lamb lean cut

•  ¼ cup soy sauce

•  1/3 cup worcestershire sauce

•  1 tbs oyster sauce

•  1 tsp pepper

•  1 tsp salt

•  1 tsp garlic powder



•  Trim visible fat and partial freeze     (aprox 2 hrs)

•  Cut into uniform half cm thick strips across the grain

•  Place all ingredients zip lock bag, close bag and

   massage ingredients together before placing

   in fridge for 24 hrs (or until meat is no longer red)

•  Drain the marinade and place strips into single layers

   on dehydrator trays

•  Dehydrate 72C (162F) deegrees for 4-6 hrs

   (It is ready when it bends but not snaps and there is

   no redness)

•  Remove from dehydrator

•  Allow to cool completely before placing in airtight

   container

Dehydrator and Oven

300g Approx

Use meat with a little fat and sinue as possible.  It makes nicer jerky


If you don't have a dehydrator you can use the lowest setting on your oven.  Times will vary depending on the temperature
