Busy Mixing Tips

5 minutes prep

1/2 cup

Thermo Machine


•  500g (17oz) full cream milk

•  60g (2oz) cream

•  pinch of salt

•  15g (0.5oz) white vinegar





•  Insert butterfly, add milk and cream and salt

•  Cook speed 1, 90C (194F) degree until it gets up to  

   temperature (aprox 2-5 minutes)

•  Remove MC and mix for a further 1 minute, speed 1

   while pouring in vinegar through the MC hole

•  Let it sit for 1 minute while curd develops

•  Line strainer with cheese cloth and place over large pot

•  Pour in mixture and let it drip for at least 10 minutes.

•  Strain out excess moisture and store ricotta in fridge

It can be stored in the fridge for about 1 week
