Chicken Tikka Masala


Step 1 - marinade

•  1 tbs oil

•  1/4 cup plain natural or greek yogurt

•  2 tbs lemon juice

•  1 tsp minced garlic

•  2 chicken thighs


Step 2 - onion

•  4 tbs butter

•  1 onion diced


Step 2 - sauce

•  1 can crushed tomatoes

•  1/2 cup coconut cream

•  salt to taste

•  1 1/2 tsp cumin

•  1 tsp ground ginger

•  1/2 tsp ground coriander seeds

•  1/2 tsp cardamom

•  1/2 tsp nutmeg

•  1/2 tsp paprika

•  1/4 tsp cayenne pepper


•  Rice for serving







25 minutes prep

25 minutes ready to eat

Stove Top and frypan

•  Combine step 1 ingredients in a bowl and set aside

•  Fry step 2 ingredients on high heat until onion is

   soft (approx 3 minutes)  

•  Add step 1 ingredients to pan and fry until chicken is

   brown (approx 5 minutes).  

•  Turn down heat and add step 3 sauce ingredients.

•  Simmer for 10 minutes

•  Serve on rice
