Slow Cooker

5 minutes prep

8.5 hrs ready to eat

•  Roast chicken carcass

•  2 carrots roughly chopped (don't peel)

•  1 onion peeled and roughly chopped

•  3 celery sticks including leaves roughly


•  3 bay leaves

•  1 tsp freshly cracked black pepper

•  2 tsp crushed rock salt

•  1 sprig parsley

•  1 sprig thyme

•  Place all ingredients in a slow cooker, cover with

   water and cook on low for 8 hours

•  Strain liquid stock through sieve

Use stock within 2 days or freeze in zip lock bags of 1 cup portions for later.  Simply defrost by laying on the bench for an hour or in the microwave (removed from bag)

Bones should be discarded once liquid is strained, however leftover vegetables are perfect to throw in a pie or soup or mush up as baby food

To make beef or lamb stock replace the chicken carcass with 1kg of beef or lamb bones

If you want ot use this stock for bone broth simple place it in the fridge and then skim off the fat the rises to the top.  Bone broth is fabulous for your gut health and can be drunk just like tea (heat a cup of it in the microwave).
