Chicken Pad Thai

15 minutes prep

15 minutes ready to eat

Stovetop

1 packet of long life noodles

1 tbs oil (or chicken flavour boost pod)

2 tsp crushed garlic

Chilly flakes to your taste

1 spring onion sliced

30g (1oz) fish sauce

30g(1oz) tamarind paste

90 (3oz) peanut or sesame oil

1 egg

500g (18oz) chicken breast sliced into strips

½ capsicum sliced into thin strips

1 carrot sliced into thin strips

Splash of lemon juice

Handful of cashews

Place long life noodles in boiling water

Fry garlic, chilly, spring onion, fish sauce, tamarind paste

   and oil

Add egg and scramble, then add chicken until

   cooked

Drain noodles, add to frying pan and toss in sauce  

   and add veggies. Cook for 2 minutes.

Serve with a splash of lemon juice and cashews on

   top

Keep jars of crushed garlic and crushed ginger in the fridge


Keep lemon juice in the fridge so you don't have to prepare it when cooking
