Busy Mixing Tips

Step 1

•  200g (7oz) frozen cooked pasta (any sort)

•  1 cup frozen peas

•  1 large zucchini sliced thin with a vegie

   peeler


Step 2

•  1/2 cup capers in vinegar drained

•  425g (15oz) can tuna in oil drained and flaked

•  1 1/2 cups ricotta

•  1/4 cup lemon juice

•  1 tbs lemon rind

•   Salt and pepper to taste


Step 3

•  handful diced parsley

•  handful grated parmesan cheese



















•  Place step 1 ingredients into a large bowl and cover

   with boiling water.



•  Combine all step 2 ingredients in a separate bowl



•  Drain pasta and vegies and combine with tuna mixture


•  Serve with step 4 ingredients on top

If you don't have frozen past just throw pasta into boiling water and then add peas and zucchini for the last 4 minutes
