Cheesy Cauliflower Bread

Busy Mixing Tips

Step 1

•  1 head of cauliflower roughly broken up

•  2 eggs

•  1/2 tsp dried oregano

•  1 cup shredded mozzarella cheese

•  1/2 cup grated parmesan

•  Salt and Pepper to taste

Step 2

•  1 1/2 cups shredded mozzarella cheese

•  Preheat oven 220C (425F)

•  Place all Step 1 ingredients food processor and

   process (turbo or blend for thermos) until well

   combined approx 15 seconds.  You may need to

   scrape down the sides of the container and blend a

   second time.

•  Spread mixture 1 cm (1/2inch) thick on a baking tray

   lined with baking papper

•  Bake in oven for 25 minutes

•  Remove from oven and sprinkle remaining cheese

   evenly over the top

•  Return to oven and cook for a further 5 - 10 minutes

5 minutes prep

40 minutes ready to eat


Thermo machine or food processor

and Oven     

This "bread" can be a little soft and is easiest to eat with a knife and fork.  It makes a great side dish with dinner or a snack.  The kids will have no idea they are eating healthy.  My 4 year asks for seconds when we serve it even though she will normally not touch cauliflower.
